Salmon is so easy to make! I buy frozen individually-packaged fillets so I can have them on hand. Then, it's easy to defrost them in the fridge before cooking.
There are plenty of simple ways to prepare salmon, but I love this one because it doesn't use any butter. I've been eating healthier, and this way there's no extra fat and calories from butter. Salmon is such a great source of protein, and it also has omega-3 fatty acids.
I use a grill pan on my electric stove, but you can also bake salmon very quickly. If you're baking, plan on about 12-15 minutes at 400 degrees.
For this simple recipe, marinate the salmon in balsamic vinaigrette dressing for at least 15 minutes. You can also let the fish defrost in the marinade while it's in the fridge.
