This 4th of July Fruit Pizza has a light and delicate sugar cookie dough crust that is almost like a shortbread cookie. I love shortbread cookies, so of course I love this! The cream cheese mixture is nice and creamy and sweet, but it is not overpowering.

We love this fruit dessert pizza because it is so light and refreshing, but it is still sweet enough to be a dessert! Not only can you make it as one of your July fourth dessert recipes, you can make it all summer long and even for brunch!

We make this sugar cookie crust and then add some fresh fruit and the pineapple glaze is just oh so good! Our Patriotic fruit pizza has a small amount of sweetness, but it is not too much.

We created this 4th of July Fruit Pizza after everyone loved our Red White and Blue Cookie Pizza so much!

What I REALLY like about this Fourth of July fruit pizza recipe is that it is actually a pineapple base glaze instead of the usual lemon glaze. We are so used to seeing the glazes on fruit recipes being made from lemon and I much prefer the pineapple taste for this fun fourth of July pizza!

I love fresh fruit, I love cookies, and I love pizza...When you are looking for easy recipes fruit pizza, this 4th of July fruit pizza dessert fits every checkbox!

I mean, this fruit pizza Fourth of July recipe is really the perfect little dessert for summertime! Don't you think so? Our fruit pizza recipe 4th of July is just so bright and beautiful, it has FRUIT so it is basically a salad right? I mean...it is healthy-ish...right?

This is what I am going to tell myself to justify it. Join me and enjoy this super easy to make sugar cookie fruit pizza for 4th of July and wow your family and friends!

Do you love Kiwi? Cherries? Mandarin oranges? I know that I do! Oranges, pineapples and kiwi just scream SUMMERTIME to me!

I am currently trying to get a pineapple that I purchased at Whole Foods to grow roots so that I can plant it and make a baby pineapple. I have heard that it takes two years for a pineapple to grow from the crown of an old one, but let's face it...What else do I have to do?

I have plants all over the house and I can't even eat any of them. I WANT TO GROW SOMETHING THAT I CAN EAT! Even if I have to wait two years...I keep telling myself that it will be worth it. 

Note: I lined my pizza pan with foil because there are holes in it and we didn't want the juices dripping out all over our oven. 

Preheat your oven to 350 degrees. 

Add together the all purpose flour and the powdered sugar together in a large mixing bowl. Add in your butter and then use a pastry blender to cut in the butter.

This takes a little time. And will give you an arm workout!

Dough will seem like it's not coming together but you can easily press it into the pan. Bake for 10-12 minutes or until just browned. Remove from oven and cool completely. 

Beat cream cheese, sugar and vanilla together with a mixer. Spread over crust. Top with fresh fruit. 

Add pineapple juice to a 1 cup measuring cup. Add water to fill to 1 cup of liquid. Add cornstarch, sugar and lemon juice and mix well.

Heat over medium heat, stirring constantly until boiling on the edges. Continue to stir for 1 minute. Remove from heat and let cool slightly. Drizzle over top of fruit. 

Cut your 4th of July Fruit Pizza into slices and serve it immediately. You can also refrigerate, covered before serving.

Store any leftovers covered in the refrigerator for up to 3 days. Please take note that since this has a cream cheese layer, it will soak into the crust after the first day.

If you want to make it ahead of your 4th of July gathering, keep this in mind. I would recommend making it no more than one day in advance Make sure that you keep it in the fridge, as the cream cheese will go bad if left at room temperature for too long.
