Owner Ian Brooke, who has worked in a variety of kitchens and bakeries before opening his own establishment, said: "I can understand why people love baked cheesecake so much. They're soft, fluffy and incredibly delicious - so, obviously, I knew I had to put my own twist on it.
"To be honest, I wasn't sure if the concept was going to work at first, but as soon as I took my first bite I knew I was on to a winner.
"The soft texture and sweet creamy taste of the cheesecake marries up beautifully with the tangy hit of the pickle brine. It's got a wee tangy kick to it and you can't help but crave more, so I think our customers will love it.
"It's the perfect way to round off a meal or if you just fancy a quick fix to satisfy your sweet tooth. It's the ultimate weird guilty pleasure for fans of dill pickles and the perfect amalgamation of Glasgow's great loves - baked cheesecake and dill pickles."
The pickle cheesecake is available at the bakery at £4 a portion and is the latest exciting creation by Ian and his team.
Brawsome Bakery can be found at 292 Dumbarton Road in the West End and is open 9 am - 4 pm, 7 days a week.
