It's officially salad season, and one of our absolute favourites is a classic Greek Salad.
It's got everything a great salad needs: freshness from the cucumber, a deep savoury hit from the olives and onion, a little sweetness from tomatoes, and that lovely, creamy feta to bring it all together. Not to mention lashings of gorgeous extra virgin olive oil.
The salad is already great, but what if you could make it even better?
That's exactly what this genius tip from Instagram account @mediterranean.diet.plan promises.
The 875K follower account revealed in a post that she was told how to make the best Greek Salad ever by an "old lady from Crete" who gave them a genius tip.
The game-changing tip is to mash half the feta you use in the salad into the dressing, instead of crumbling it all over the top.
The recipe goes like this: "tomatoes, red onion, green pepper, cucumber, feta, lemon juice, olives, red wine vinegar and a good few generous glugs of extra virgin olive oil.
"Mash half the feta with the juice from 1 lemon, 1 tbsp of red wine vinegar and 4 tbsp of extra virgin olive oil. Then mix in with the rest of the salad. The other half of the feta is just cubed/roughly chopped. I normally use 2 blocks, one mashed, one chopped."
The whole thing is then finished off with plenty of fresh dill.
The resulting salad looks absolutely divine, and we can totally see how this would make it extra creamy and distribute all that salty goodness evenly across the fresh vegetables.
