A po' boy is a traditional sandwich from Louisiana that most often consists of deep fried meat or seafood, served in a crusty French loaf.

We've chosen king prawns, or 'shrimp', for a traditional taste of the deep south and served the prawn sandwich with a cabbage and hot sauce slaw.

It truly is comfort food at its finest and comes together in only 30 minutes so makes a great midweek meal option too.

If you're not a fan of prawns, feel free to sub with chicken pieces instead - just adjust the cooking timing slightly!
