Of course, you can use plain flour, but it may be more challenging to work with. '00' flour is the way to go. We use 00 flour in our handmade pasta recipe here. 

Also known as double zero flour or doppio zero, '00' flour is a soft wheat Italian flour with a medium grade of gluten.

Grind sizes vary from double zero to two in Italy and other parts of Europe. Double zero is the finest grind that's almost powdery, and two is the coarsest. To note: the term "double zero" does not refer to gluten content or the amount of protein in the flour. 

It's a versatile type of flour that can be used in cakes, bread pizza and more. It's often the secret behind a tender and stretchy pizza dough that gives that signature crispy crust on a Neapolitan pizza. Yum!

Yes 00 flour is available to purchase in your local supermarket (Woolworths and Coles) and speciality grocery stores.

Both flours are refined and made from wheat. However it all comes down to the wheat. 00 is made from soft wheat that's low in protein and plain flour is made from a blend of soft and hard wheat (high in protein). To note: Australian plain flour is the equivalent to all-purpose flour.
