Italian Beef Pinwheels are a quick and easy appetizer or snack made with beef chuck roast, pizza dough, banana peppers, and provolone cheese. These homemade Italian stuffed roll-ups are perfect served with dip as an afternoon snack.

Cheesy beef pinwheels are the perfect after-school snack for your kids. The meat simmers during the day while they're at school and the pinwheels are just coming out of the oven as the kids rush in. They are easily adaptable and can also be taken to pot-luck parties or backyard barbecues.

Spray the pot of a slow cooker with nonstick cooking spray and add the roast to the pot.

Add the beef broth and season with Italian seasoning and garlic powder.

Top with the butter slices.

Spread the banana peppers in an even layer over the top of the roast, then add the liquid from the banana pepper jar.

Place the lid on the slow cooker and set to cook on low for 6 hours or high for 4 hours.

When the meat is finished cooking, remove it from the pot and shred it with a fork.

Set it aside to cool slightly.

Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

Unroll the pizza dough on a lightly floured surface and roll it out until it's around 1/8 inch thick.

Layer the cheese slices evenly on top of the crust.

Spread the Italian beef in a thin layer over the top of the cheese.

Roll the dough up tightly until it resembles a long log.

Cut the log into 10 even slices, around one inch thick.

Place the slices on the baking sheet.

Bake in the oven for 18 to 20 minutes, until the pizza dough is golden brown.

Serve with liquid from the slow cooker for dipping.

Dough: Pizza dough is perfect for these roll-ups, however, you can use pastry dough, crescent roll dough, or even phyllo dough. It all depends on how you want the final texture to taste.  

Cheese: This recipe uses provolone cheese slices, but you can use Colby Jack, Monterrey Jack, mozzarella, Havarti, Gruyere, or another soft, melty cheese.

Pro tip: The air fryer will make them crispy and improve the texture, while the microwave won't.
