Grilled Chicken Salad Filled Cucumber Cups Recipe
I don't know about you, but I love to make food fun for my kids. That is partly why I made them these super cute Grilled Chicken Salad Filled Cucumber Cups. these would make excellent appetizers, or finger foods if you made them a bit smaller. They are a low carb, gluten free meal/snack/appetizer, and are soo incredibly tasty!
Grilled Chicken Salad Filled Cucumber Cups:
Directions:

Wash, and peel your three cucumbers-cut off the very ends
As even as possible cute your cucumbers into three even pieces
Using a melon baller, or knife, carefully scoop out about an inch inside the cucumbers
Fill them with the chicken salad mix {tuna would also work}
Top with a cherry tomato
