vegetable oil
ciabatta rolls, halved
mayonnaise
handfuls rocket
beefsteak (slicing) tomato, thickly sliced
frozen peas
ripe avocado
small garlic clove, crushed
Juice 1 lime
finely chopped mint
Get ahead: Make guacamole up to 6hr ahead, bit don't add the mint. Cover and chill. To serve, stir in the mint.
