Insisting the Earth is flat takes a particular sort of person who enjoys being wildly wrong about everything all the time, so it's no surprise they ignored all the rules to try and fly over Antarctica.

Antarctica seems as good a place as any for Flat-Earthers to pretend is the edge of the world because it is inconvenient to get there, along with being one of the most extreme climates on the planet, but it's not actually restricted for those who want to see it for themselves. The planet is still round so they won't find what they're looking for but they are welcome to try - assuming they follow the regular rules of travel, such as filing a flight plan or answering air traffic control.
Antarctica does pose some additional difficulties because it's governed by a treaty between countries which designates it a Demilitarized Zone, meaning nobody can do military activities there, but it is open to tourism. It's also designated as an environmentally protected area for research so those visiting have to be in compliance with not ruining it for everybody else, and because of the extreme climate and geography there are also safety concerns - things which are true of other places people visit all the time too.
The reason the chartered flight was surrounded was because they ignored air traffic control, not because you can't fly over the antarctic. The same thing would happen in any airspace, not just Antarctica. There are scenic flights over the mysterious south pole, cruises that will take you there, and even camping and hiking for those really determined to do so.
We don't know who needs to hear this today, but Antarctica isn't the Flat Earth border, it doesn't have reptile people guarding it or giant prehistoric spiders, and it probably doesn't have mammoths although that does seem the most plausible of the conspiracy theories regarding the southernmost polar region.
