In a medium mixing bowl combine the flour, oats, salt, baking soda, cinnamon, flax, and sugar.
Mix until all is well combined.
Stir in the vegetable oil and water.
Then fold in the grated apples.
Spoon mixture into a greased mini muffin pan.
Bake at 350 degrees for about 15 minutes.
You can absolutely make these easy apple muffins in advance. Prep a batch and freeze them if you like. Just let them thaw slowly in the refrigerator when you are ready to eat them!
