This recipe comes together just like your standard pancake recipe. Make a buttermilk of sorts with almond milk and apple cider vinegar, and then add vanilla and melted coconut oil. Then add the wet ingredients to flour, baking powder, and salt. Mix well and cook in more melted coconut oil.
Finally, top these delicious no egg pancakes with Barlean's Superfruit Seed Blend (a delicious mix of all-organic shredded coconut, ground flaxseed and berry powders), pure maple syrup, and fresh berries, these almond milk pancakes steal the show at my house. A word about using Culinary Coconut oil in this recipe. I like the flavor of coconut oil in my baked goods, but some people don't. If you don't like the coconut oil flavor, don't worry! Barleans Culinary Coconut Oil is flavorless and does not affect the taste of foods.
The other great thing about this recipe is that the pancakes freeze very well. It's not hard at all to quadruple this recipe. The hard part is snagging the fluffy vegan pancakes away from your family so that some of them end up in the freezer. ??
