BISCUIT BASE INGREDINETS:

1 cup plain flour

1/2 cup desiccated coconut

1/2 cup brown sugar

125g unsalted butter (melted)

TOPPING INGREDIENTS:

1/2 cup brown sugar

1 tsp vanilla extract

125g unsalted butter (cubed)

395g sweetened condensed milk

200g melting chocolate

1 tbsp vegetable oil

First preheat the air fryer to 160 degrees Celsius and line a pan with baking paper.

Combine the ingredients for the biscuit base in a bowl then press into the pan and bake for 15 minutes until golden.

Leave in the fridge to cool and harden, then start preparing the caramel by placing butter, vanilla and sugar in a saucepan.

Lower the air fryer to 140 degrees Celsius, combine the mixture and leave to simmer until bubbles start to form.

Whisk for one minute then pour the caramel over the biscuit base, ensuring the layer is even.

Bake in the air fryer for 12 minutes then leave on the bench to cool for 20 minutes before refrigerating for half an hour.

To make the chocolate topping, place the chocolate and oil together in a bowl and microwave for 30 seconds.

Pour the melted chocolate on top of the caramel and return the baking tray to the fridge for one hour to set.

The end result looks delicious and would likely be a crowd pleaser at social events and gatherings.
