Boston Cream Blondies Are SO Indulgent

In case you haven't noticed, we're big on American classics like Boston Cream Pie, which is why we have so many variations. The cake, pudding, and chocolate combo is unbeatable. Here we made it into blondie form with a dense and chewy base studded with butterscotch chips and topped with an easy chocolate ganache. It's the most heavenly dessert.

Ingredients

For the blondies
  • Cooking spray

  • 185 g

    plain flour

  • 1 tsp.

    baking powder

  • 3/4 tsp.

    salt

  • 115 g

    butter, room temperature

  • 225 g

    packed brown sugar

  • 2

    large eggs

  • 1 tsp.

    pure vanilla extract

  • 85 g

    butterscotch chips

For the topping
  • 100 g

    Bird's Instant Custard Powder

  • 300 mL

    whole milk, cold

  • 40 g

    chocolate chips

  • 3 tbsp.

    double cream, hot

Directions

  1. Make the blondie: Preheat oven to 180°C (160ºC fan). Grease a 20cm square baking pan with cooking spray and line with parchment paper, allowing a 5cm overhang on 2 sides. Grease parchment. In a medium bowl, whisk together flour, baking powder, and salt.
  2. In a large bowl, beat butter and brown sugar until pale and fluffy, about 2 minutes. Add eggs and vanilla and beat until well combined. Stir in flour mixture until just combined, then fold in butterscotch chips.
  3. Scrape batter into prepared pan and spread evenly with spatula. Bake until golden brown and a toothpick inserted into the centre comes out clean, 35 to 40 minutes. Let cool completely on a wire rack.
  4. Make the topping: In a medium bowl, whisk custard powder with cold milk. Let sit until thickened, 5 minutes. Whisk again until smooth, then spread the thick mixture evenly over cooled blondies. Refrigerate until chilled, 15 minutes.
  5. Using the parchment overhang, remove blondies from baking pan and slice into bars.
  6. In a medium heatproof safe bowl, pour hot cream over chocolate. Cover with a plate and let sit 3 minutes. Stir until chocolate is melted and smooth. If chocolate is not completely melted, microwave in 5 second increments, stirring well in between, until fully melted.
  7. Drizzle chocolate over top of sliced blondies. Serve immediately or refrigerate until ready to serve.
