Though you probably picture pretty white ceramic when you hear "ramekin," the truth is this little multitasker comes in various materials and weights: glass, porcelain, metal, and stoneware (which is very expensive and crazy heavy-but also most likely to give you a uniform bake due to its insulation). Some cooks prefer certain materials for their looks or the way they cook food-e.g. ceramic instead of glass for baked eggs-but it all comes down to personal preference.

Make sure to pick a style that's glazed on the inside and out. That'll prevent stains on every side. If you somehow end up with stains on your porcelain, mix a tablespoon of baking soda with water or white vinegar to form a paste, then scrub the stain until it's gone, and rinse.
